MAIN INGREDIENTS:
1 Small box/bag or pasta of your choice
1/2 of each pepper (red, yellow and orange) cubed
1 jalapeno pepper finely chopped (optional)
1 small red onion cubed
1 block of fresh feta cheese cubed
1 small container sun dried tomatoes chopped
INGREDIENTS FOR MARINADE:
1/4 Cup olive oil (good quality one)
1 Tablespoon balsamic vinegar
1 Tablespoon balsamic dressing
2 teaspoons black pepper
salt to taste
2 teaspoons dried basil
1 teaspoon dried oregano
2 cloves finely minced garlic
1 spring of finely cut green onion
fresh chopped curly parsley
Boil Pasta as directed on package. I used bow tie pasta, but and fairly large pasta works really well.
Once boiled, drain and set aside to cool
in a pan grill the chopped peppers and onions with a little olive oil on high heat, just to get a golden color, but not fully cook them.
Set the grilled veggies aside to cool.
While your veggies and pasta are cooling, mix together all the ingredients for marinade in a small bowl. mix will with a whisk.
Transfer the pasta, peppers and onion into a large bowl and pour the marinade all over and mix well.
Add the cubed feta and the sun dried tomatoes at the very end and gentle mix trying not to break the feta cubes.
Cover and leave in the fridge to cool further about an hour works well, this pasta dish taste better the longer it is left in the fridge.
Its amazing the day after and makes a perfect side dish. Can be served cold or at room temperature.
We love taking this dish to picnic and to BBQ's in the park.
