Garlic Fish
I was bored of the same old pan fried fish so changed it up a bit.
Marinate the fish in everything but the olive oil and fresh parsley.
keep in the fridge no longer that 20-30 minutes.
In a large frying pan add the olive oil and turn temperature of the stove to high.
slowly add the fish fillets, be careful it splatters.
Cook for 2-3 minutes on each side or until golden brown. Try not to over cook as fish becomes chewy.
Garnish with fresh chopped parsley and serve with lime wedges the Mango Salsa.

Mango Salsa
INGREDIENTS FOR MARINADE:
5-6 fillets of Tilapia or and other mild white fish
2 tablespoons olive oil
fresh chopped parsley
5 tablespoons orange juice
5 cloves fresh garlic finely minced
2 teaspoons finely minced ginger
3 teaspoons black pepper
1 tablespoon soy sauce (low sodium)
1 tablespoon worchestershire sauce
salt to taste
2 teaspoons red chili powder (or to taste)
3 teaspoons cumin
1 teaspoon turmeric powder
INGREDIENTS:
1 large mango cubed (not too ripe)
1 small red onion cubed
half of a red bell pepper cubed
1 jalapeno pepper finely chopped (optional)
fresh chopped cilantro
2 teaspoons balsamic vinegar
fresh lime juice of 1 lime
salt & pepper to taste
2 teaspoons ground cumin
1 teaspoon cayenne pepper
Mix all ingredients together in a large bowl and leave it covered in the fridge for a few hours. The longer it sits the better it tastes!
